you can download binary packages from
xdarwin or install from source with
darwinports or
fink.

okay i will actuall read your post - a vast vast majority of x lives in the directory "/usr/X11R6/" i suppose you could blow that away and be gone with it. using a port/package management tool would be nice here :0)
